Mini Pies

1 can of your favorite pie filling
1 box pie crust mix (or make your own from scratch)
1 egg white
flour for rolling pie crust

cookie sheet
small bowl
rolling pin
cookie cutter
cooking spray

1. Preheat oven to 350 degrees.
2. Mix pie crust.
3. Roll out pie crust to desired thickness.
4. Cut circles with cookie cutter (we actually used a large can).
5. Grease cookie sheet.
6. Place one circle on cookie sheet and brush edges with egg white (just use your finger - it works just fine).
7. Spoon small helping of pie filling in middle of circle.
8. Place second circle of pie crust on top of pie filling.
9. Press edges down.
10. Pinch edges of pie with fork.
11. Prick fork in top of pie to allow for venting.
12. Brush egg white on top of pie.
13. Bake approximately 10-15 minutes until golden brown.
14. Let cool and then EAT!
